HOLIDAY FOOD! (INDEPENDENCE DAY!)

I MADE SOME NEW RECIPES FOR THE LAST HOLIDAY.

JalapeƱo Popper Corn Cakes with Spicy Ranch Dip

I MADE MY OWN PRESERVATIVE FREE TACO SEASONING.

I ALSO MADE THIS FOR SNACKING ON THE 4TH:

MARY FROM THE BLOG, "HOME IS WHERE THE BOAT IS" PROVIDED THIS RECIPE:

To 2 – 3 avocados, add 1/4 cup of onion (I used red), 1/2 cup each diced plum tomato and chopped cilantro, lime juice and salt to taste.

I bag of Trader Joe’s  frozen fire roasted corn .  (If you don’t have a Trader Joe’s near you, grill 2 ears of corn until charred and cut off the kernels.)

Add 6 slices crumbled cooked bacon

and 1/3 cup chopped pickled jalapenos

FOR THOSE WITH A SWEET TOOTH I MADE A FLAG OUT OF RASPBERRIES, MINI MARSHMALLOWS AND BLUEBERRIES.   

AND WATERMELON CUPS WITH PINEAPPLE CREAM CHEESE FROSTING (AGAIN FROM MARY'S BLOG.) 

1/2 CUP BUTTER (ROOM TEMP.)

1 8 OZ. PKG. CREAM CHEESE (ROOM TEMP.)

4 TBS. PINEAPPLE JUICE

4 CUPS POWDERED SUGAR (SIFTED)

Directions

  1. Cream the butter and cream cheese together with an electric mixer in a large bowl until light and fluffy. Add the pineapple juice and continue beating until absorbed into the mixture. Beat the confectioners' sugar into the mixture a little at a time until completely integrated.

 I DECORATED COOKIES AND CONES LIKE THESE FOR THE HOLIDAY.

OF COURSE THE "OREO'S" WERE GLUTEN FREE!

LAST MINUTE JULY 4TH TREATS FOR YOU AND YOUR FAMILY!

HERE ARE SOME QUICK IDEAS FOR THIS WEEKEND:

HOW EASY IS IT TO PLOP FLAGS IN COKE BOTTLES?


WRAP SOME TWIZZLERS IN WAL MART RIBBON FOR FAVORS AT DINNER.


 NEED A FAST TREAT?  GET ICE CREAM SANDWICHES, INSERT A STICK FOR A HANDLE OR NOT, BUT ROLL EDGES IN RED, WHITE AND BLUE SPRINKLES!


ANOTHER QUICK CENTERPIECE, WHITE CARNATIONS AND FLAGS IN BOTTLES.  AGAIN A TRIP TO WAL MART FOR FLAGS AND RIBBON.




IMPRESS FOLKS AT YOUR FAMILY POT LUCK WITH A QUICK FRUIT PRESENTATION.  

 
ANOTHER CUTE DECORATION CAN BE MADE FROM PENNY CANDY AND GUM BALLS (OR JAW BREAKERS!)

LET THE KIDS OR GRAND KIDS DECORATE SIMPLE FROSTED CUPCAKES.


TWIZZLERS AGAIN MAKE A GREAT CENTERPIECE OR QUICK DECORATION!

AND LAST, TO IMPRESS YOUR FAMILY OR FRIENDS, OR JUST TO ENJOY YOURSELF.


RED, WHITE AND BLUE BERRIE LEMONADE:


Ingredients
  • 1 can frozen white grape juice concentrate, organic preferred
  • 1 cup freshly squeezed lemon juice
  • 1 gallon cold water, or water and ice
  • 2 apples, cut across into round slices
  • 1 pint blueberries, washed
  • 1 pint strawberries, stems removed and halved
Directions
Combine the grape juice concentrate, lemon juice, and water. If you have a star shaped cookie cutter, use it to cut shapes out of the apples. Otherwise cut the sliced apple rounds into halves and add. Add all of the fruit into the lemonade. Serve with a ladle as you would a punch.
